Lion's Mane Mushroom, Sweet Potato & Chive Sushi



For rice:

  • 3 cups short grain sushi rice
  • 3 1/3 cups water
  • 1/2 cup rice vinegar 
  • 1/4 cup sugar
  • 1/2 tsp. salt
  • 1 tbsp dashi (optional)

For Lion's Mane Marinade:

  • 1 lbs lion’s mane mushroom
  • ½ tsp. dulse powder (optional)
  • 3 tbs. soy sauce
  • 3 tsp rice vinegar
  • 3 tbs water
  • Oil, for cooking


  • 1 small sweet potato
  • 9-12 chives (or a few scallions)
  • Nori Sheets
  • Everything Bagel Spice

1. Rinse the rice in a bowl and swirl it around. Drain the water and repeat this until the water is no longer cloudy.

2. Drain the rice and then place it in a pot with the 3 1/3 cups of water to soak for 30 mins

3. While the rice soaks, mix together the 1/2 cup of rice vinegar, 1/4 cup of sugar, 1/2 tsp of salt and 1 tbsp of dashi in a small sauce pan and heat up until the powders dissolve. DO NOT LET BOIL. Once dissolved set aside and let cool

4. Once rice is done soaking, move it to high heat to start cooking. Once water starts to boil reduce heat to medium and let simmer for 15 mins. Do not remove lid until rice is done cooking, the steam is what gives the rice its nice texture. Once cooked for 15 mins, let it sit off heat for another 15 mins.

5. Pour the rice into a non-metalic bowl and stir in the rice vinegar. Continuously cut the rice with the edge of a spatula or wooden spoon to help speed up the cooling process and mix in the rice vinegar mixture. PRO TIP, fan the rice as you mix it.

6. Once cooled down to room temperature the rice is ready to use.


Lion's Mane:

 1. While the sushi rice soaks you can prepare the lion's mane marinade by cutting it into “steaks”, about ½ inch thick.

2. Mix the remaining 3 tsp of rice wine vinegar with the dulse powder, soy sauce and 4 tbsp water and place the mushrooms in, making sure both sides get covered in the marinade until rice is done.

3. Once ready heat a little oil in a large skillet. Place the mushrooms in the hot pan, and cook for a few minutes on each side, until seared. Remove from the pan, let cool, and then cut into thin, long strips.

Sweet Potato

1. Cook the sweet potato while rice soaks. Turn oven to 450 and cut the sweet potato into long thin strips.

2. Place on a baking sheet and glaze with oil. Bake for 45 mins or until tender.



1. Once all ingredients have been prepared, you can start making your rolls. Take your sushi roller and cover it with plastic wrap to reduce sticking. Place the rice in a thin layer on the roller in the shape of the Nori Sheet leaving a 1/2 of space for overlap.

2. Place the Nori sheet ontop of the rice.

3. Place the strips of sweet potato, lions mane and full chives along the middle of the nori sheet.

4. Tightly roll the sushi together.

5. Dip the one side of the roll in everything bagel spice as a topper

6. Cut into individual pieces (wet your knife and use a sharp or serrated knife)

7. Enjoy!
