Mushroom "Pulled Pork" (Vegan)

Mushroom "pulled pork" is a great addition to nachos, tacos or even for a pulled pork sandwich. It is a very easy recipe and gives real pulled pork a run for its money in terms of taste.

EQUIPMENT

  • Oven
  • Pan
  • Baking Tray
  • Parchment Paper
  • Tongs

INGREDIENTS

  • 1 cluster mushrooms (any variety will work, preferably oysters though)
  • 2 tbsp olive oil 30 ml divided
  • 1 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic minced
  • 1/4 cup BBQ Sauce any kind you prefer

INSTRUCTIONS

  • Preheat oven to 400 degrees F.
  • Shred mushrooms by hand into small pieces to resemble the size of pulled pork. Place on a parchment paper lined baking sheet.
  • Drizzle 1 tbsp of olive oil, the paprika, salt, cayenne and garlic over the pulled mushrooms. Toss them to evenly coat and then place in oven for 20 minutes. Cook until they are brown and a bit crispy to help give it a closer texture of pulled pork.
  • Heat 1 tbsp of olive oil in a large pan over medium heat. Place the cooked mushrooms into the pan and add the BBQ sauce. Cook for 3-5 mins to get the mixture thick.
  • Place the mushrooms on your nachos, tacos or sandwich and enjoy!
